Scallops in aromatic sauce

Ingredients:
- Scallops 200g
- Feta cheese 50g
- Salt to taste
- Pepper to taste
- Olive oil to taste
- Lemon zest
- 1 clove of garlic
- Parsley to taste
- Oregano to taste
- Basil to taste
- Onion
- Olives
- Vinegar 1 dessert spoon
- Lemon juice 1 tablespoon
Preparation:
Clean the scallops and season with salt and pepper. Heat two tablespoons of olive oil in a large skillet over medium heat. When the oil starts to boil, add the scallops and brown them on both sides, about 2-3 minutes. Add another drizzle of olive oil, the lemon zest and the garlic. Cook until the garlic begins to release its aromas and the scallops are opaque, 3 to 4 minutes. Remove from the heat. Meanwhile, prepare the sauce: mix the olive oil, parsley, oregano, basil, onion, olives, vinegar and lemon juice in a bowl. Add the feta cheese and stir well. Transfer the scallops to a platter and pour the feta cheese sauce over them. Season with fleur de sel and serve with a green salad.
