Beef & Vegetable Shirataki Noodle Bowl

Appropriate for Stage I through Maintenance

 

Introduction:

This hearty and nourishing noodle bowl is rich in protein and full of hydrating vegetables. It’s perfect for a satisfying, warming meal during any stage of the Fit6 Program—from Stage I (with limited noodle use) to Maintenance. The broth-based soup supports digestion, and the addition of turmeric and cumin adds anti-inflammatory benefits.

 

Ingredients:

Main Ingredients:

  • 32 oz organic beef broth
  • 32 oz filtered water
  • Thinly sliced beef (very thin, almost like beef shavings)
  • 1 green zucchini, diced
  • 1 yellow zucchini, diced
  • 2–3 cloves garlic, diced
  • 1 yellow onion, diced
  • Shirataki noodles (small portion for one serving)

Seasonings:

  • Sea salt, to taste
  • Turmeric, to taste
  • Black pepper, to taste
  • Cumin, to taste

Optional Garnish:

  • Fresh cilantro or parsley, chopped

 

Instructions:

  1. In a medium to large pot, combine beef broth and filtered water. Bring to a boil.
  2. Once boiling, add thinly sliced raw beef and cook on a hard boil for about 10 minutes.
  3. Add diced zucchini, garlic, and onion to the pot. Reduce heat to medium and cook for another 5 minutes.
  4. Meanwhile, cook shirataki noodles in a separate pot according to package instructions.
  5. Once noodles are ready, add them to the pot with the meat and vegetables.
  6. Season the soup with sea salt, turmeric, black pepper, and cumin.
  7. Turn off the heat and serve hot in a bowl.
  8. Garnish with fresh cilantro or parsley if desired.

 

Notes:

  • For Stage I, shirataki noodles should only be eaten once per week.
  • If using this recipe for leftovers, reheat only the meat/veggie/broth mixture. Do not reheat with noodles—cook noodles fresh for each serving.
  • The beef should be extremely thin, like shavings, to cook quickly and evenly.
