Beef & Vegetable Shirataki Noodle Bowl

Appropriate for Stage I through Maintenance
Introduction:
This hearty and nourishing noodle bowl is rich in protein and full of hydrating vegetables. It’s perfect for a satisfying, warming meal during any stage of the Fit6 Program—from Stage I (with limited noodle use) to Maintenance. The broth-based soup supports digestion, and the addition of turmeric and cumin adds anti-inflammatory benefits.
Ingredients:
Main Ingredients:
- 32 oz organic beef broth
- 32 oz filtered water
- Thinly sliced beef (very thin, almost like beef shavings)
- 1 green zucchini, diced
- 1 yellow zucchini, diced
- 2–3 cloves garlic, diced
- 1 yellow onion, diced
- Shirataki noodles (small portion for one serving)
Seasonings:
- Sea salt, to taste
- Turmeric, to taste
- Black pepper, to taste
- Cumin, to taste
Optional Garnish:
- Fresh cilantro or parsley, chopped
Instructions:
- In a medium to large pot, combine beef broth and filtered water. Bring to a boil.
- Once boiling, add thinly sliced raw beef and cook on a hard boil for about 10 minutes.
- Add diced zucchini, garlic, and onion to the pot. Reduce heat to medium and cook for another 5 minutes.
- Meanwhile, cook shirataki noodles in a separate pot according to package instructions.
- Once noodles are ready, add them to the pot with the meat and vegetables.
- Season the soup with sea salt, turmeric, black pepper, and cumin.
- Turn off the heat and serve hot in a bowl.
- Garnish with fresh cilantro or parsley if desired.
Notes:
- For Stage I, shirataki noodles should only be eaten once per week.
- If using this recipe for leftovers, reheat only the meat/veggie/broth mixture. Do not reheat with noodles—cook noodles fresh for each serving.
- The beef should be extremely thin, like shavings, to cook quickly and evenly.
