Tuna wrap with ratatouille

Ingredients:
- 4 tablespoons of rolled oats
- 1 egg
- 1 egg white
- Water (as needed – the water helps balance the consistency of the pancake batter so it's easier to mix)
- Onion
- Celery
- Leek
- Zucchini
- Eggplant
- Red pepper
- Yellow pepper
- Green pepper
- Olive oil
- Salt
- Pepper
- Tuna
Preparation:
Cut the vegetables into small pieces (diced) and sauté them in the olive oil. Season with salt and pepper. Blend the oats until you get a smooth, even "flour." Add the egg, egg white, and water and mix well. In a pan, add a drop of oil and spread well with a napkin. Place a very thin layer of batter in the pan. When golden brown, turn the wrap over. While the other side is browning, fill the wrap with the previously cooked vegetables and flaked tuna. Fold the wrap to your liking and serve hot.
