Primavera Rice

Ingredients:
- 25 g brown rice
- Chives to taste
- 1 chicken fillet
- ¼ of broccoli
- ¼ of cauliflower
- 100g of mushrooms
- 1 ripe tomato
- 1 small onion
- 1 tablespoon of olive oil
Preparation:
Chop the onion. In a saucepan place the chopped onion, oil and diced tomato and chicken fillet chopped into small pieces. Pour the rice and mix well. Pour 2 glasses of water. Bring to boil. Cut the broccoli and cauliflower into small pieces and the mushrooms into strips. When boiling add the vegetables. Season with salt and add water. When cooked let cool slightly and sprinkle with chopped chives.
