Lamb meatballs with yogurt sauce and couscous

Ingredients:

  • Minced lamb
  • 1 finely chopped onion
  • Garlic
  • Fresh ginger
  • Ground cumin
  • Ground bay leaf
  • Sweet paprika
  • Indian saffron (turmeric)
  • Salt
  • Pepper
  • 1 hard-boiled egg
  • 1 natural yogurt
  • Homemade mayonnaise (recipe from step 1 – optional)
  • Freshly chopped cilantro
  • 4 tablespoons of couscous
  • 1 diced red pepper
  • 1 diced green pepper
  • 1 chopped tomato
  • Olive oil

Preparation:

In a large bowl, season the meat with salt, pepper, half a grated garlic clove, and a little grated ginger. Add the ground bay leaf, cumin, sweet paprika, turmeric, ⅓ of the onion, and the chopped hard-boiled egg. Mix all ingredients well. Shape the minced meat into balls. In another bowl, mix the yogurt with the remaining half grated garlic clove, salt, and pepper. Add the mayonnaise and chopped cilantro to taste. Mix well and refrigerate until ready to serve. Cook the couscous according to the package instructions. Heat 3 tablespoons of oil in a frying pan. Add the remaining onion and the diced peppers. Stir well and let it sauté without browning. Add the tomato. Mix well and reduce the heat. Add the couscous to the frying pan. Stir everything well. Add a little chopped cilantro. Turn off the heat and mix all the ingredients well. Meanwhile, fry the meatballs. Place a drizzle of oil in a frying pan and, once hot, fry the meatballs for 7 to 10 minutes over medium heat until golden brown. Once the meat is cooked, serve. Serve the meatballs with the yogurt sauce and couscous.
