Chef Salad

Chef Salad
  • This recipe is appropriate for all stages of the Fit6Program
  • Stages 1-6 enjoy only at lunchtime
  • Maintenance Stages may be enjoyed at either lunch or dinnertime

A salad is an easy and delicious way to consume 3-4 servings of vegetables in one meal. Salads are also easy to prepare ahead of time, making them ideal for taking to the office for lunch or as a quick dinner, when life is busy. There are many nutritional benefits of eating vegetables raw or uncooked, as the nutrients are retained more readily since there is no heat applied to the vegetables. 

Salad

  • Romaine lettuce, chopped 4 cups 
  • Arugula 3 cups 
  • Spinach 3 cups 
  • Cucumber, diced 1 cup 
  • Radish, diced 1 cup 
  • Avocado, diced ½ full avocado 
  • Egg, hardboiled ½ full egg 
  • Turkey, roasted & diced 2 cups (fresh turkey, nitrate free from the deli) 

Instructions

Arrange ingredients in a bowl, using half of the prepared recipe, and saving half for the following day(s) for your second serving. 

Dressing

  • Cold-pressed olive oil 2 Tbsp 
  • Sesame seeds 2 Tbsp
  • Lemon, fresh squeezed 2 whole lemon 
  • Balsamic vinegar 2 tsp 

Instructions

Mix ingredients in a small blender and blend briefly to mix them thoroughly. 

This makes 2 servings, divide half for one serving of salad and save the other half for the other half of the salad on the following day(s). Refrigerate leftover dressing.
