Quinoa Bowl with Avocado

Ingredients:

½ avocado

1 egg
-
100g smoked salmon
-
4 tablespoons quinoa
-
1 cucumber
-
1 small onion
-
1 radish
-
5 cherry tomatoes
-
Salt to taste
-
Olive oil to taste
-
4 fresh basil leaves
-
Juice of half a lemon
Preparation:
Cook the quinoa according to the package instructions. Boil the egg, and once it is cooked, slice it. Slice the avocado into thin slices. Cut the cherry tomatoes in half. Chop the onion. Cut the cucumber into small cubes and the radish into thin slices. Mix the quinoa, onion, cherry tomatoes, and cucumber in a deep dish. Season with salt, pepper, and olive oil, and mix well. Place the avocado slices, alternating with the egg slices and smoked salmon on top. Drizzle with olive oil, lemon juice, and add the fresh basil leaves.
